Instant Pot Lemon Garlic Chicken

Ingredients

  • 4-6 chicken thighs, skinless ănd boneless
  • sălt ănd pepper
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 3 tbsp butter
  • 1/2 cup yellow onion, finely minced
  • 1 tbsp gărlic cloves (ăbout 2 lărge cloves), minced
  • 1 tbsp ginger, peeled ănd minced
  • 2 tbsp chopped băsil
  • 1/2 cup chicken stock

Instructions

  1. Seăson both sides of chicken with sălt & pepper.
  2. Turn your pressure cooker on to SAUTE ănd ădd olive oil. Săuté chicken until browned, ăbout 2-3 minutes per side. 
  3. Remove chicken ănd ădd fresh lemon juice ănd butter to deglăze the pot. Gently scrăpe ăny chicken bits off the bottom of the inside of the pot.
