Vegan peach muffins

So this recipe is courtesy of my mum, who decided to use some very overripe, squishy peaches, and transform them into fluffy and delicious muffins! I am very against wasting food, so this is the perfect recipe to use up any old, ripe fruit that you don't really want to eat!

These muffins are totally perfect for picnics, work, uni or to pack into your kids lunchboxes! They make a totally great snack, that is healthier than any store or bakery bought treats!

Vegan peach muffins
makes 16-18
2 cups flour
1/2 cup wholemeal flour
1 cup raw brown sugar
1 tbsp baking powder
1 1/2 tsp ground ginger
1 1/2 tsp cinnamon
1/2 tsp nutmeg

1 1/4 cups almond or soy milk
1/4 cup apple sauce (optional)
1/2 cup vegetable oil
1 tsp vanilla
1 tsp apple cider vinegar
2 cups chopped ripe peaches (skin on or off, whatever you prefer)

1. Mix together all the dry ingredients into a bowl.
2. Make a well in the middle of the dry ingredients and add all of wet ingredients- except the peaches. Fold until well combined- however try not to roughly mix as this will cause the muffins to not be as fluffy. If the mixture is still quite thick add more plant milk.
3. Fold through the peaches carefully.
4. Pour mix into silicon muffin moulds, and bake at 180 degrees C for 15-20 minutes or until brown on the top.
5. Remove and allow to cool before taking them out of the moulds.

- You can opt out peaches for other fruits such as apple (may have to boil in advance first), pears or nectarines
- Add desiccated coconut or vegan chocolate chips for a flavour booster.
- Top with some coconut yoghurt for a delicious breakfast or afternoon snack

These are so so good! Not overly sweet, but super fluffy and wholesome!
