Vegan mini pizzas are crispy, full of texture and flavour. The dough is made a day in advance and stored in the fridge or can used from frozen.

Ingredients
∙ Makes 20 small mini pizzas

30 g Baby rocket / arugula, fresh
10 Cherry tomatoes
2 Courgettes, small
Condiments
15 Black olives
1 Favourite tomato sauce
1 Favourite vegan pesto
Baking & Spices
500 g High-gluten all-purpose or bread flour
10 g Salt
1 Salt & pepper
1 Semolina flour
1 tsp Yeast, instant dried
Oils & Vinegars
4 tbsp Olive oil
Nuts & Seeds
1 tbsp Pine nuts, raw
Dairy
1 chunk Cheese, vegan
Liquids
300 ml Water
Other
½ tsp pul biber (mild chilli flakes)
