Hot Cross Buns

Easter is slowly coming upon us! One of my favourite parts of Easter is the caramel filled eggs and hot cross buns! There is just something about a warm hot cross bun that takes me back to my childhood! Supermarket hot cross buns are so dang good, however if you want to make your own this year, this recipe is definitely a winner! They are fluffy, soft, moist and so yum! I guarantee your family and friends will eat them all within a day (mine did!)

Vegan hot cross buns
Makes 6 large or 8 small buns
1 tbsp. yeast
1 tsp sugar
1/2 cup warm water
1/2 cup warmed soy milk
1/3 cup vegan butter softened (I used savour cultured vegan butter)
1 1/2 tsp cinnamon
1/2 tsp nutmeg
3/4 cup raisins or sultanas
1/3 cup sugar
 3 cups flour + extra

Topping
1/3 cup flour
water
Method
1. Start by preparing the yeast. Place the yeast, 1 tsp sugar and water in a bowl, mix slightly and leave to sit for 10 minutes.
2. Once the yeast is fluffy, add the milk, butter and sugar and whisk well. Then add in the dried fruit.
3. Fold in the cinnamon, nutmeg and flour and mix with your hands till you have a thick dough- add more flour if the dough is sticky. Place onto a floured surface and knead for a few minutes. Then place in a bowl, cover with a tea towel and leave in a warm place for 3 hours.
4. Once the dough has risen, remove for the bowl and knead for 5 minutes. Then separate dough into either 6 or 8 equal sizes. Shape into round bun forms, and place on a baking tray. Cover with a tea towel and leave to sit for 45 minutes.
5. After 45 minutes the dough should have risen more. To make the topping, mix together the flour with as much water needed so it forms a thick but still pourable consistency (it should not be too liquid).
6. Use a piping bag or just a spoon to create the cross marks over the buns.
7. Bake at 160 degrees C for 25-30 minutes checking occasionally. Buns should be brown and firm to the touch.
8. Remove and serve with butter!


There you have it! This recipe is a bit of a process, however it is super easy, anyone can make it! I really hope you give this a try this Easter (or anytime of the year really!)
