Hello and Happy New Year! I seriously cannot believe we have reached 2019, the time is honestly flying by!

This little blog is now almost 4 years old! I never really gave much thought as to how long my blogging would last for, but here we are! Still sharing super yummy and easy vegan recipes for all of you! I'm really glad that you are here, and I hope you give this recipe a go!


Today I am coming to you with a super delicious recipe for orange choc chip muffins! This combo is definitely one of those things that you either love, or hate! Me personally, I'm kind of on the fence! Orange choc chip ice cream is definitely not my fave thing. But, damn these muffins so so good! These came out soft, light, fluffy and super delicious, my parents loved them! And I am so so happy with them!

Orange choc chip muffins (vegan)
Makes 12 
Ingredients 
1/3 cup oil
1/3 cup sugar
1/2 cup soy milk
1 1/2 oranges juiced + zest
1 tsp vanilla essence
2 cups self raising flour
1/2 tsp baking powder
1/2 cup choc chips (vegan)
Method:
1. Start by whisking together the wet ingredients and zest.
2. Add in the flour and baking powder and fold together to combine. Try not to over mix the batter.
3. Fold in the chocolate chips, then spoon into muffin trays
4. Bake in an oven preheated at 18- degrees C for around 20 minutes or when clean when poked with a skewer.


That's it! Super delicious, easy to make and great to pack for school, work or uni lunches or to have as an afternoon snack!
