Gluten free and vegan chocolate chip cookies

I absolutely love the small of freshly baked cookies, it just makes everything feel so warm, and homey! These cookies are so so chewy and delicious with chunks of dark chocolate, I definitely think you need to give these a try! 

Gluten free baking is actually not as hard as I originally anticipated, however getting used to the taste of gluten free flour will take a bit of time, for me! But even my family loved them, which is always a great surprise, and I'm sure yours will too! 
If you are gluten free or coeliac, and find it difficult to substitute GF flour into non-gluten free recipes, then you definitely need to give these a go!

Gluten free and vegan chocolate chip cookies
Makes 12
Ingredients
3/4 cup soft brown sugar
1/3 cup oil
1/4 cup soy milk
1 tsp vanilla
1 tbsp. chia seeds mixed with 3 tbsp. water (chia egg)
1 1/2 + 2 tbsp. gluten free flour
2 tsp baking powder
1/3 cup chopped vegan chocolate
Method:
1. In a large bowl, whisk together the brown sugar and oil, then add the milk, vanilla and chia egg and whisk well.
2. Fold in the flour and baking powder, until you have a thick cookie dough.
3. Fold in the chocolate. Then shape into small balls, and place on a baking sheet and flatten.
4. Bake at 180 degrees C, until slightly browned- around 15 minutes.
5. Remove, allow to cool, and devour!!

There you have it! This recipe is so super simply, you'll have a batch of fragrant and delicious cookies in under half an hour!
