vegan cinnamon sugar cookies

Cinnamon has to be one of my favourite spices of all time! I chuck it into smoothies, banana ice creams, muffins, banana bread and now. . . into cookies! These cinnamon cookies are bomb (yes I know I made them, but I can say that)! Not only that, but this recipe is so insanely simple and will take you max 30 minutes from start to finish. . . so if you start now, you could have a warm batch of cinnamony-sugary goodness is half an hour! Not to mention these are so insanely fluffy and delicious your whole family will love them! So what ARE you waiting for?!! Get baking!



Vegan cinnamon sugar cookies
Makes- 12-14 cookies depending on size
Ingredients
1/2 cup vegan butter or margarine
3/4 cup white sugar
1 tsp apply cider vinegar
1 tsp vanilla essence
1 1/2 cups flour
1 tsp baking powder
2 tbsp. non-dairy milk
1 tbsp. cinnamon

2 tbsp. sugar
2 tsp cinnamon
Method:
1. Start my mixing the margarine/butter and sugar till thick and creamy. Then add the apple cider and vanilla.
2. Next fold in the flour, baking powder and cinnamon till you have a thick dough- add the milk if the batter is quite dry.
3. On a plate mix together the 2 tbsp. sugar and 2 tsp cinnamon.
4. Taking the cookie batter, roll out a teaspoonful into a ball, roll in the cinnamon sugar and place on a tray lined with baking paper. Repeat with the rest of the batter.
5. Bake in an oven at 180 degrees C for around 20 minutes or until slightly browned. They shouldn't be too firm, as they will harden as they cool.
6. Remove and enjoy!


So so fluffy and delishhhhh!
