Vegan Chocolate Hot Cross Buns

I am soooooo glad Easter is just around the corner, because hot cross buns are sooooo gooood! Supermarkets here in Auckland have been selling hot cross buns for a few months now, and they always have my mouth watering! Unfortunately they don't cater to us vegans (yet!), so I did what I always so, and made my own! Super easy, limited prep time, and so so fluffy and delicious! I hope you give these a try this Easter, and definitely let me know what you think!


Vegan Chocolate Hot Cross Buns
Ingredients
Buns
1 packet yeast
3/4 cup warmed plant milk (any will do)
1/3 cup + 2 tsp sugar
1 heaped tbsp cocoa powder
2 3/4 cup flour
1 tsp cinnamon
1/4 cup melted vegan margarine/butter
1/2 cup chopped vegan chocolate
Cross
2 tbsp flour
1tsp sugar
1 tbsp water
Glaze (optional)
1 tbsp melted vegan margarine
1 tsp sugar
Method
1. Start by making the buns! In a bowl mix together the yeast, warmed (but not hot!) plant milk and the 2 tsp sugar. Leave for 5 minutes to allow yeast to foam. Then add the melted margarine and sugar and whisk until combined.
2. In a separate bowl, mix together the 1/3 cup sugar, flour, cocoa powder, cinnamon and chopped chocolate. Add the wet to the dry and mix until fully combined.
3. Put the dough on a well floured surface and knead for 10 minutes- make sure to use as much flour as needed if dough is sticky. Place back into dry bowl, and place in a warm area, covered with a clean tea towel for 1-2 hours or until doubled in size.
4. Once the dough has doubled, place back on floured surface and knead well. Next partition into 6-8 equal shares, and shape each into a bun size. Place onto a baked tray lined with baking paper, and repeat with others. Cover with a tea towel and leave to rise for 45 minutes.
5. To make the cross, mix together all the ingredients until you have a thick mixture. Place into a ziplock or piping bag, and pipe a cross along each bun (once buns have risen!), this doesn't have to be done too neatly.
6. Bake in an oven preheated to 180 degrees C, and bake for 20-25minutes, or until you tap a bun and it sounds almost hollow.
7. Once cooked, you can make the glaze by mixing the margarine and sugar together and lightly brushing each bun with the mix. (Glaze adds a shine to the bun, but isn't necessary!)
8. Serve the buns hot and fresh with some vegan butter!! So so yum!!

Note:
To make traditional hot cross buns, opt out the chocolate chips and cocoa powder, and add 1/2 tsp nutmeg, 1/2 tsp mixed spice, 2 tsp cinnamon (instead of 1), and 1 1/2 cups sultanas or raisins.
