Fudgy vegan brownies

A few weeks ago I had the strongest craving for a rich chocolately gooey brownie, so I whipped up this batch and omgggg are they good! They are so thick, and delicious and super fudgy!
These are the real deal brownies, no black beans, no sweet potatoes, no dates, no tofu or any of those "healthier" ingredients, just a whole lot of flour, sugar and chocolate! Just a basic homemade brownie that is definitely okay to treat on now and then! (No judgement against those ingredients, but they just don't hack it sometimes, okaayyy!!)


Fudgy vegan brownies
1 cup soy milk
1/3 cup vegetable oil
1 tsp white vinegar
1 tsp vanilla
1 1/4 cup sugar
2 cups flour
2 tsp baking powder
1/2 cup cocoa powder
1/2 chopped dark chocolate (optional)
Method
1. Start by placing the soy milk, sugar, vegetable oil, vinegar and vanilla into a bowl and whisking together until fully combined.
2. Add all all the dry ingredients and fold to combine.
3. Add the chocolate chips and fold into the batter.
4. Pour into a baking tin, and bake at 180 degrees for 20-25 minutes or until the skewer comes out clean!
5. Allow to cool for 10 minutes (if you can wait!), then eat! These taste so good with a scoop of vegan vanilla ice cream!!
