The best cinnamon rolls (vegan)

I have tried so so many different attempts at cinnamon rolls, and they all turned out the same, dry, tasteless and just not good at all. But I kept persevering because cinnamon rolls are life, and I was determined to make a vegan version!And my hard work finally paid off! There are THE BEST CINNAMON ROLLS EVER! They turned out sooooooo damn good I can't stop raving about them! They are thick, fluffy, cinnamony and delicious, I could down like 3 in one go (and i did)!

Vegan Cinnamon rolls
Ingredients
Dough
1/2 cup warm water
1 sachet dry yeast
1 tsp sugar
1/2 cup soy milk
1/3 cup vegan margarine/butter (I used a coconut oil based one)
1/3 cup sugar
2 3/4 cup flour
Filling
3 tbsp brown sugar
1 tbsp cinnamon
2 tbsp melted vegan margarine/butter
Sauce
3 tbsp melted vegan margarine/butter
2 tbsp brown sugar
Method
1) Start by preparing the yeast: Add the warm water to a large bowl and add the sugar, mix to dissolve. Next add the yeast, mix lightly and leave for 7-8 minutes until it becomes foamy.
2) In a large mug add the vegan margarine, place in the microwave and melt, then add the soy milk and put in the microwave again for 20-30 seconds, next add the sugar and mix well to combine. Make sure this mixture is lukewarm, then add to the yeast mixture and lightly mix- it will not fully combine, that is okay.
3) Next add 2 cups of flour to the yeast mixture, and mix until you have a muffin-like-batter consistency. Add the rest of the flour (3/4 cup) and mix to fully combine. Next flour the bench top, tip out the dough and knead with your hands for 5-6 minutes. The dough will be relatively sticky, so knead it until it become smooth, elastic and not sticky- add as much extra flour as needed for this part (I added around 1/2 cup).
4) Clean the large mixing bowl, and oil it. Place the dough into the bowl, cover with a tea towel and leave to rise for 2 hours. Note: Do not leave the dough rising for more than 3 hours.

I was waay too happy with how they turned out!

5)  To make the sugar filling, add the sugar and cinnamon to a small bowl and mix.
6) To make the sauce, mix the melted margarine and sugar together- set aside. 
7) Once you dough has risen, place back onto the floured bench top and knead for 1-2 minutes. Roll it out into a large rectangle shape. Brush the dough with vegan margarine, then spread the sugar filling evenly over the rolled out dough.
8) Roll up the dough from the shorter end of the rectangle, roll tightly till you reach the end. Next take a sharp serrated knife and slice the dough into approximately 10-12 rolls.
9) Take the sauce you prepared earlier and spread approximately 3/4 of it into you lined baking pan- cover the base evenly.
10) Take your rolls and place them into this pan, and pour the rest of the sauce over it. Cover the pan with a tea towel and leave rolls to rise for 35-45 minutes.
11) Preheat the oven to 180 degrees C, and after the 35-45 minutes is up, place the rolls into the oven, and bake for 20-25 minutes. When done they will still be relatively soft, and will firm up as they cool.

Optional- mix together icing sugar, 1 tbsp vegan margarine and water till you have a thick icing, and spread over the warm rolls.


Well there you have it! This is quite a process, but it is actually super simple to make, and by the end you will have a tray of beautiful and delicious cinnamon rolls!
