Double chocolate chip muffins (vegan)

Finaaallllllyyyy I am back with a recipe post! I've been blogging quite a bit lately, however I haven't posted a new recipe since the beginning of June- with my Healthy peanut butter slice recipe! So it is definitely time for another recipe!

The other day I was really craving some muffins! I came back from a 6 hour shift at work, and I just wanted a fluffy, thick and chocolately muffin! Unfortunately vegan muffins are not common in most grocery stories (rude!), and I wasn't about to drive 25 minutes to my nearest vegan bakery, so I decided to make my own (cheaper too)!!
They turned out soooooo damn good, and honestly, I think i ate most of them myself!

Vegan double chocolate chip muffins
Ingredients
1 cup sugar
1/2 cup vegan margarine/butter
1 tsp vanilla
3/4 cup soy milk (or other non-dairy milk)
1 1/2 cups flour
1/3 cup cocoa powder
1 tbsp ground flaxseed mixed with 2 tbsp water (flaxegg)
1 tsp baking powder
1/4 cup vegan chocolate (broken into chip size)
Method
1. Start by "creaming" the vegan margarine and sugar together, then add the milk, flax egg and vanilla. Don't worry if the mixture goes gluggy and doesn't mix well together- this will happen because of the cold milk mixing with the margarine.
2. Add the flour, cocoa powder and baking powder and mix thoroughly to combine.
3. Add the chocolate chips and fold together
4. Scoop the mixture into muffin moulds and bake at 180 degrees C for 10-15 minutes or until cooked.

Done! That really is it! Takes all of about 25 minutes to have your own batch of muffins!
