Peanut butter stuffed cookies

Heeeey! So I haven't posted a recipe blogpost in quite a while now- since Feb! So today I come to you with the ultimate cookie recipe! I made these today, and oh my lawd they are gooooddd!! Peanut butter cookies (guess this!) stuffed with more peanut butter! So if you are a nut butter lover, this is right up your alley!
Without further time wasted, lets just get straight into the recipe!

Peanut butter stuffed cookies

Ingredients
Stuffing
1/2 cup melted peanut butter
1 cup icing sugar
Cookies
1/2 cup each- brown and white sugar
2 full tbsp peanut butter
3/4 cup softened vegan butter
2 cups flour
1 flax egg
1 tsp baking powder
1 tsp vanilla

Method
1. Make the stuffing first, by just mixing the two ingredients together till you have a thick consistency. Shape into small balls (roughly 12-13), place on a sheet of baking paper, and place in the fridge for 30 minutes.
2. To make the cookies, mix together the sugars, peanut butter and butter until smooth and creamy, add the flax egg and mix well. Add the rest of the ingredients and fold to combine.You should have a thick dough now.
3. Roll your cookie dough into balls, try to make the same amount as the stuffing. Take a ball of dough, flatten it, and place one of you stuffing balls in the middle, fold the dough around it, and roll in your hands to completely cover the stuffing. Repeat with the rest.
4. Place on some baking paper, and bake at 150 degrees celcius for 10-15 minutes checking occassionally. When you remove them from the oven, they will still be fairly soft, leave aside and they will harden as they cool.
