Choc Chip cookie cake

My favourite way to eat a cookie, is when it's the size of a cake!
Thick, dense and so so delicious! If you've had a scroll through my blog, you'll see I'm clearly a cookie lover! Today's cookie recipe will produce just 1 cookie! One larrge, chewy and super yummy cookie! Although I'm sad to say it isn't one serving!

Choc chip cookie cake
2 cups plain flour
1 tsp each baking powder and baking soda
1/4 cup white sugar
1/2 cup vegan butter (Nuttlex. Olivani)
3/4 cup brown sugar
1 tsp vanilla
1 tbsp ground flaxseed, mixed with 3 tbsp water
1 tbsp soy milk
1/2 cup chocolate chips
Method:
1. Firstly make the flax egg, mix the flaxseed with the water and leave for 5 minutes.
2. Cream the butter and sugar together until thick and creamy, add in the flax egg, vanilla and soy milk and mix well.
3. Next add in the flour and baking powder and baking soda and mix fully to combine.
4. Fold in the chocolate chips.
5. Spoon the mixture into a cake tin lined with baking paper, and bake at 180 degrees C for 10-15minutes. Allow to cool before cutting!


There you have it! You'll be left with a delicious cookie cake!
