Vegan Twix Bars

Oh my goodness! Do I have an awesome recipe for you! I tried these out today and they turned out SO GOOD! I cannot comprehend how yum they are! If you are vegan, and used to love eating chocolate bars, and you actually kinda miss how handy, readily available and yum they are (I mean its chocolate! So ofc its yum! I'm happy to admit that!), you have to try out this recipe! These taste so much like twix bars its actually insane. . . maybe even better!
A crunchy biscuit bottom, followed by a thick caramel middle and coated in rich dark chocolate, these are the ultimate sweet treat, and will 100% satisfy your sweet tooth!
These are vegan and can be made gluten free too!

Vegan twix bars
Ingredients
Bottom layer
1 cup oats ground into flour (use GF oats if needed)
1/4 cup almond meal
1/4 cup coconut flour
1/8 cup sugar/coconut sugar
1 tbsp maple syrup
1 tsp vanilla essence
1/4 cup melted coconut oil
Caramel middle
2 cups dates soaked in boiling water for 5 minutes
1/4 cup melted coconut oil
1 tsp vanilla essence
2 tbsp plant milk (oat, soy, rice, coconut)
Top layer
250g vegan dark chocolate (I used a block of Whittaker's Dark Ghana)
Method
1) For the bottom biscuit layer, place all the ingredients in a bowl (ground the oats into flour first), and mix well till full combined. Pour the crumble into a tin and spread evenly to form a thin biscuit layer. Bake for 10 mins at 160 degrees Celsius. Remove and allow to cool for 10-20 minutes
2) While the bottom layer is cooling make the caramel middle layer. Drain the soaked dates completely and place in a blender with the coconut oil, vanilla and milk. Blend completely until thick and creamy.
3) Spread the caramel mixture over the cooled based evenly, and place in the freezer for 1 hour to firm up.
4) Take the tin out of the freezer and cut into long bar shapes.
5) Melt the chocolate in a microwave and dip each bar into the chocolate and cover evenly. Place on a piece of baking paper, and repeat with the rest of the bars. Place in the fridge to harden.
Done!!! 
I guarantee that you will not be disappointed with this vegan version of a twix bar (and if you are, message me and I'll personally make you a batch!!)
These are the perfect sweet treat, however I won't be surprised if it doesn't last long!
