Fudgy Chocolate Muffins

It's seriously been far too long since my last post, I'm so sorry but I've been so so busy with Uni lately! Luckily I'm coming back with some totally delicious fudgy vegan chocolate muffins! AND believe it or not these muffins are actually healthy! Bursting with only natural, organic ingredients these are definitely better than your average muffin! Make these in the weekend and take them on the go during the week! This recipe is refined sugar free, vegan and can be adapted to be gluten free too!

Fudgy Chocolate Muffins
1 3/4 cup brown rice flour
1/4 cup plain flour or gluten free flour
2 tsp baking powder
1 cup coconut sugar or raw brown sugar
2/3 cup cocoa powder or raw cacao powder
1 cup plant based milk
1 chia egg- 1 tbsp chia in 2 tbsp water- soak for 5 minutes
1/2-3/4 cup water
1/2 cup melted organic coconut oil (use extra virgin if you can)
3/4 cup chopped dark chocolate (optional but recommended)

Method
1) Mix together all your dry ingredients in a large bowl.
2) Add your plant milk, chia egg, 1/2 cup water and melted coconut oil to the dry ingredients and fold in, try not to over mix. If your batter it still thick add small amounts of water till you get a smooth consistency (but not too wet!)
3) Add your dark chocolate chunks and fold in.
4) Pour into muffin molds and bake at 180 degrees Celsius for 10-12 minutes, these cook fairly fast so keep an eye on them. Stick a knife into them to make sure they're fully cooked through.
5) Remove, cool and eat!!
