Vegan Bolognese

I always try to create new dinner recipes, as I love to cook for my family (who are not vegan). That's why I try to come up with yummy and healthy recipes to show my family just how delicious vegan eating can be. It really doesn't have to be boring or restrictive, all you have to do is get creative!

Ever missed your "bolognese" as a vegan. I personally use to love it, it was such a warming, thick  and delicious meal with copious amounts of pasta! It really is comfort food at its finest!
So I'm here to share my own personal new favourite dinner- vegan bolognese, this recipe is low fat, salt free and just as delicious and even more nutritious!
I am super excited to share this recipe with you, because it is just that good! It will make you go back for seconds and thirds! I guarantee it! This recipe is so insanely simple, and will literally take you around 20 minutes to make! Such a fast, easy and delicious lunch or dinner that anyone can make!

Vegan Bolognese
Ingredients
1 cup dry brown lentils or 1 can brown lentils
1 onion diced
1 tsp garlic crushed
1 tsp ginger crushed
2 cups tomato pasta sauce (I used macro organic passata)
1 tsp chilli/paprika powder
1 tsp tumeric powder
1 tsp ground cumin powder
1/2 cup water
3 cups baby spinach
salt (optional)
pasta to serve
Method
1) If using dry lentils I recommend soaking them in boiling water for 2-3 hours to soften, then boil for 10-15 minutes until cooked. If not, just drain and rinse you canned lentils.
2) In a pan saute the onions in coconut oil until brown, add lentils and spices and mix through. Next add the pasta sauce and 1/2 cup water and mix together.
3) Allow to simmer for 10 minutes- if it gets too thick, just add more water or pasta sauce. Then add the spinach and stir through, letting it wilt. 
4) That is actually it! Serve on pasta and you can even top with nutritional yeast or grated vegan cheese!
I served mine with some broccoli, and most certainly went back for seconds!
